  • I have overall responsibility for menu planning and food production in college, catering for around 400 meals per day for fellows and students.
  • I am also responsible for food served for our summer schools, conferences, and other internal and external functions.
  • I am responsible for ensuring we adhere to food safety regulations and manage the kitchen budget.

Profile

As Head Chef, I have overall responsibility for college meals - from purchasing food to maintaining hygiene and safety standards in the kitchen to staff training. I work with a team of dining hall chefs to plan all College meals, from daily self-serve options to formal halls and banquets, to special theme nights. In this role I aim to ensure that the food at Trinity is of the highest quality, caters to a range of dietary requirements, and as much as possible comes from local and sustainable sources.



I trained as a chef at Magdalen College, and worked at several other Oxford colleges before joining Trinity in 1996, where I have been Head Chef since 2008. I am lucky to have trained and worked in a variety of settings, including several Michelin-starred restaurants in Spain and London. I am proud to lead a team that has a reputation for serving some of the best food in Oxford, and love experimenting and continuing the push the boundaries.
